This is one of my favorite, easy soups that I make regularly.  You could easily double the recipe and freeze extra into gallon ziplock freezer bags for future dinners.  This is a great vegetarian dinner (since you get protein from the lentils) served with a toasted baguette or rice.  My whole family loves this!

Lentil Kale Soup

Recipe inspired by one that I saw on San Francisco’s Golden Gate Mother’s Group.

Lentil and Kale Soup

Ingredients:

  • 1 Tablespoon olive oil
  • 1 cup carrots, finely sliced
  • 2 onions, diced
  • 2 garlic cloves, minced
  • 8 cups chicken broth
  • 2 cups dry lentils (I prefer red)
  • 4 bay leaves
  • pinch of kosher salt
  • 2 bunches of kale (or spinach), chopped roughly

Directions:

In a large pot, sauté the onions and carrot in the oil over medium heat for 3-5 minutes until onions turn clear.  Add the garlic and sauté.  Add the lentils and brown for 5 minutes (be careful not to burn the onions and garlic).  Add the chicken broth, bay leaves and salt.

Reduce heat to a simmer. Cover and cook until lentils are soft, about 45 minutes (less for red lentils). Remove bay leaves.  Throw in kale (or spinach), cover and simmer until greens are soft (about 10 more minutes).  Remove from heat, let cool slightly, and purée in blender before serving.

Great for the whole family.  Add more salt for adults when serving.

This is a wonderful and interesting dish – a great option for a vegetarian night.  There are so many tastes (and textures) going on: salty feta and olives , sour dried cranberries, bitter kale, sweet red onion, and aromatic garlic.  I could eat this once every two weeks — and I don’t know why I don’t!  It’s great with linguine, but also great with healthier penne (we often use Barilla Plus or Barilla Whole Grain). In this photo I tried a brown rice penne from Trader Joe’s which was also good.  Two notes: 1) whole wheat pastas don’t reheat that well (so chewy!) just in case you plan to make enough to have leftovers and 2) I thought 5-6 cloves of garlic was plenty (recipe calls for an entire head).

Pasta with Kale, Olives and Cranberries

Pasta with Kale, Kalamata Olives, Dried Cranberries, Toasted Garlic & Feta

Yield: Serves 6-8

This pasta dish is also known as “crazy spaghetti” because it is crazy good-a family favorite!

Ingredients:

1/3 cup extra-virgin olive oil
1 head garlic, cloves peeled and thinly sliced lengthwise
1 medium red onion, finely chopped
1/2 cup dried cranberries
1 large bunch of kale, stems removed and leaves coarsely chopped
1/2 cup water
3/4 teaspoon salt
3/4 teaspoon black pepper
1 pound spaghetti or other pasta (we use whole wheat)
1/2 cup Kalamata olives, cut into slivers-pits removed
1 1/2 cups crumbled feta cheese

Directions:

1. Heat olive oil in a heavy skillet over medium heat until it shimmers, then cook garlic, stirring, until golden, about 3 minutes. Transfer garlic with a slotted spoon to paper towels to drain. Cook onion in the remaining oil over medium heat, stirring occasionally, until softened, 3 to 5 minutes. Add dried cranberries and cook until plumped, about 1 minute.

2. Add kale leaves into onion mixture with water and 3/4 teaspoon each of salt and pepper. Cook, covered, over medium-high heat until almost tender, about 5 minutes.

3. Meanwhile, cook pasta in a pasta pot of boiling salted water until aldente. Reserve 1 cup pasta-cooking water and drain pasta.

4. Toss pasta with kale, Kalamata olives, and 1/2 cup pasta water. Season with salt and pepper. Sprinkle feta cheese and garlic chips over the pasta dish and serve warm.

Although you can’t tell from the picture, these kale chips are light as air!  They are delicate and crispy and dissolve in your mouth when you eat them.  They are really a healthy replacement to potato chips and fun to have out as a snack or appetizer before dinner.  My friend Ashley made them for us and the kids and adults all loved them.  It’s great to have yet another way to serve this superfood.

Kale Chips

Ingredients:

1 bunch fresh kale

2 tablespoons extra virgin olive oil

1/4 teaspoon kosher salt

Directions:

Wash kale and dry thoroughly with paper towels.  Drying the kale well is key or your kale chips will turn moist and chewy just hours after you bake them.  Remove the large ribs and roughly tear the leaves into 2 inch pieces.  Spread them out onto 2 rimmed baking sheets (so they are not too crowded or they will steam) and toss with olive oil and salt.  Bake at 375 degrees for 13 minutes.  Season to taste with additional salt  if needed.  Serve warm or at room temperature within an hour or two of baking (or they may turn chewy).
